What do you know about resistant starch?

I knew very little until recently. Resistant starch is a kind of fiber found in certain plant foods which has a positive effect on our digestion. My understanding is that it doesn’t get digested but passes through the body. So where can we find this wonder starch?

  • unripe, green bananas (like those that haven’t turned deep yellow or don’t have brown spots)
  • beans
  • brown rice
  • plantains
  • seeds

Notice that these are things you need to chew, or put some effort into, in order to eat them. I’m not fond of reheated white potatoes or banana peels, but can really work with some black beans and corn tortillas.
