More Veggies?

If you are not a vegetarian or vegan, you may be trying to add more veggies to your diet but feel like that handful of green beans and some kale on your sandwich is about as much as you can do. Not so, my friend. You can include veggies in your breakfast! I add peppers, onions, spinach, and tomatoes in my omelets with a side of avocado. Ha! For one meal, I get in 2-3 servings of veggies. Here are additional ways to add a bit of deliciousness in the morning.

Make a better breakfast hash. Add things like sweet potatoes or beets, or extra peppers and onions to your hash to make it extra tasty. (My friend says, “This is the sh*t.”) Breakfast burritos are fab, and I like mine with eggs, black beans, tomatoes, sausage (or not), and cheese. Make gluten-free carrot cake pancakes. Eat fruit like bananas and berries on any and everything. Make a smoothie with greens hidden by lovely pineapple. You can do it! You can!

  • 1 cup non-dairy milk, or water and juice, or just water and ice
  • 1  banana (good use for frozen bananas that got ripe before I could use them)
  • 1 cup baby spinach or kale
  • 1 cup pineapple chunks (fresh or canned)

Put all in blender and let it rip until it is ready to drink.
