My Banana Bread

I had some bananas which were very ripe so I made banana bread. Here is what I did. Using my stand mixer, I put 3 very ripe peeled bananas, 1 egg, and 1 stick of softened butter in the bowl. I mixed this on low until the bananas were completely mixed with the butter. I added a splash of oil, about 2 teaspoons of vanilla, and kept mixing. I added 1 cup of sugar and kept mixing. I sifted about 1 1/2 cups of flour, about 1 teaspoon baking powder, and 1/2 teaspoon baking soda with a dash of salt. I put that in the mixer while it was running on low. I let it run for about 2-3 minutes until everything was incorporated. Then I chopped 2 handfuls of pecans after toasting them in a dry skillet and stirred them into the batter. I put the batter in a loaf pan which had been sprayed with cooking spray and baked it at 350F until done – about 45 minutes. I’ll post the pix later.
