A Little Bread Pudding

Last night, I wanted something but it was too late to go anywhere and I wasn’t sure what I wanted anyway. I looked in my crowded fridge for something, anything appealing. Nothing. Cake? Too much work. Pie? Really too much work. Candy? Not in the mood. Ice cream? I want warm, or at least room temp, not cold. I found an apple, a pear, some eggs, 1/2 stick of butter, and part of a loaf of apple cinnamon brioche that had been in there for a week. Bread pudding!

I scrubbed the apple and pear, halved, and cored them. I sliced them as thin as I could and set aside. I took 2 eggs, 1 cup of sugar and whisked them together in a small casserole dish. I warmed 2 cups of milk for 90 seconds in the microwave and whisked in the warmed milk to the egg/sugar mixture. I was careful not to get the milk too hot, or I would have had scrambled eggs. I poured in a lot of vanilla, like maybe 2 tablespoons. Then I cut up the loaf of brioche into squares about 1 inch and added them to the milk mix. After mashing them down so they were completely soaked in the milk, I folded in the sliced fruit. I added 1/4 of one stick of butter, cubed. I sprinkled the top with cinnamon and nutmeg. I added the rest of the butter, cubed. I baked it at 350 for perhaps 50 minutes. Delish!
